Delicious refreshing raw vegan cake


 



This time in the newsletter (going out on Thursday 17 January) I will share the recipe of this wonderful raw vegan cake with you! We did really enjoy it since it's almost fat free and 80/10/10 compatible.

This is how it looks like when a raw food family visits us! :)

Looots of yummy and beautiful food... Most of it will bring us through a week. Other things like lettuce we have to get in between again.

It's such a wonderful time to be with friends and like-minded people. Makes me feel like we are not soooo strange anymore ;). All around us are strange - *griiin*.

Raw Onion Bread

This is just tooo delicious not to share :). You HAVE to try and tell me how you liked it! Promise?



Raw (Onion)Bread
2 cups almond pulp
1 cup zucchini
1 cup psyllium husks
½ cup flax seeds (ground)
3 dates
piece onion (or other spices)
some salt spring (not necessary though)
2-3 table spoons lemon juice





First you want to grind the flax seeds in a dry blender. Pour them in a bowl. With almonds and water make "milk" (by mixing them together in a high speed blender). Pour the milk through a nut bag to filter out the almond pulp. You can drink the milk - it's gooood! 




Add the almond pulp to the flax seed flour. Peel the zucchini and put them in the blender together with the dates, onion, lemon juice to make a paste. Now stir in this paste with the remaining ingredients to make a dough.  
You can form little buns or loafs of bread. Let it dry over night (about 14 hours). 


....and enjoooyyy this crunchy but soft and amazing bread!! You can slice it, too, and spread all kinds of toppings on it!!

Healthy smoothies for kids?

Are you looking for healthy yet delicious recipes your kids will love? It has never been easier to create healthy and yummy foods for kids. Green smoothies usually include fresh fruits or leafy greens (or for a more valuable one even wild edibles), and since they are full of nutrients and are soooo delicious, they are a must for growing kids.

Try these easy green smoothie recipes:

Use bananas, berries, and mangoes with chickweed, lambs quarters, and romaine lettuce. If it should not be sweet enough, use dates (preferably soaked). You can also use other kinds of greens including dandelion, goutweed, kale, spinach, mustard/turnip/collard/beet greens, romaine & many more and throw in a few fruits your kid loves and blend it with filtered water. The great thing is greens can be combined with anything without causing trouble. They also taste great with coconut water.

You can even make “frozen” smooties. Just peel bananas and freeze them and other fruits you like. Put the frozen fruits and some greens in the blender and you have a delicious treat for hot summer days!

Nutritional benefits of green smoothies:

As we tend not to chew our food enough green smoothies are a great way to absorb the vitamins and minerals as the food is in an easily digestible form. You should still “chew” the smoothie, though, as this is important for digestion. With the essential nutrients in their body, your kids will have enough energy to last through their fun and action filled day!

Healthy green smoothies also balance the sweet from the fruit and the bitterness from the greens perfectly. So, you can actually get more greens “down” than normally which is great for your body!

To make it easier for your kids in order to get used to healthy smoothies add more fruit and less greens in the beginning. You can also give them funny names. It’s fun to ask for the Monster drink or Dragon’s greens instead of “that green stuff”. Make sure you use organic and ripe ingredients only. If you drink them too as a role model (hey, they will be good for you, too!!) they are more likely to gobble them down, too. Don’t explain how healthy, etc. they are… Just drink and enjooooyyy them!! :) With lots of fruits and greens you can create endless of different, colorful and tasty new smoothies.

And as always remember it has to appeal to the eye! Make it fun and beautiful! Include your kids. They will have fun decorating ;). If they did it themselves they are more likely to eat it, too!

Summer camp 2009

I just realized I haven't shown you what was going on during our last camp (in July). So, here are some impressions. We've had so much luck with the weather. There were about 60 people (including children) ages 0 - 64! So much fun and information. This week was filled with lectures about health. There was a self-defence class every morning...yaaaawn. (But as my children and me slept outside it was easy to wake up with the sun ;)...) The whole group learned about wild edibles and how to identify them. We went swimming in a close-by lake and did fun games with the children. We prepared our food together and learned from each other :). It makes it so much easier to live in a group of like-minded folks :). Yes, we need a tribe! Who's with me?? I have so many ideas I don't have the time to realize them all. This was the camp site. Do you see the tiny white spots in the forest? That's where we were...beeeautiful.
The kids had fun in a sandy spot near a creek (all right next to our spot). Germany is beautiful. Come on over and enjoy it with us next time!! :)
This is where we've held our lectures mostly. You can never get too much sun ;).



And of course we couldn't miss our camp fires! They are a must :). With singing and laughing we usually ended the days :).
